Sweet & Savory Trail Mix

Sweet & Savory Trail Mix

A great topping for yogurt as a morning or afternoon snack.

Ingredients:
  • Prep time 10 minutes
  • Cook time 20 minutes
  • 1 cup raw almonds
  • 1 cup roasted unsalted peanuts
  • 1 cup raw cashews
  • 1 Tbsp. corn starch
  • 2 Tbsp. Soy Vay® Island Teriyaki Marinade & Sauce
  • 1 cup dried apricots, chopped
  • 1 cup dried banana chips
  • ½ cup dried cranberries
  • ½ cup sunflower seeds
Directions:
  1. Preheat the oven to 350F.
  2. In a large bowl, add the almonds, peanuts, and cashews.
  3. Sprinkle the cornstarch over the nuts and mix well.
  4. Add the Soy Vay® Island Teriyaki Marinade & Sauce and toss until well coated.
  5. Spread the mixture on a foil lined sheet pan.
  6. Bake for 20 to 25 minutes or until the nuts have browned slightly.
  7. Cool completely.
  8. In a large bowl, add the remaining ingredients. Fold in the nuts.

NOTE: Re-toasting in oven can help reduce stickiness. Makes 6 cups

Teriyaki Chicken Jerky

Teriyaki Chicken Jerky

Thinly sliced chicken strips, tenderized, and marinated in a teriyaki marinade and baked down into some of the most delicious jerky you’ve ever had.

Ingredients:
  • Prep Time: 5 minutes + 1 hour marinade
  • Cook Time: 5 to 7 hours
  • 4 boneless skinless chicken breast halves, turkey breasts or 1 lb. London broil
  • ½ cup Soy Vay® Veri Veri Teriyaki® Marinade & Sauce
  • 1/4 tsp. red pepper flakes
Directions:
  1. Slice each breast lengthwise into strips about 1/2-inch thick. With the back of a pan, pound the chicken to an even thickness of ¼ inch.
  2. Place the chicken in a large bowl. Add the Soy Vay® Veri Veri Teriyaki® Marinade & Sauce, red pepper flakes, and mix well.
  3. Chill covered for 1 hour.
  4. Preheat the oven to 200F.
  5. Place a rack over a foil lined sheet pan. Spray the rack with vegetable cooking spray.
  6. Arrange the chicken about 1-inch apart on the rack. Discard any remaining marinade.
  7. Bake the jerky for 5 to 7 hours or until dry but not brittle.

Ranched-Up Hummus Dip

Homemade hummus dip with a hint of ranch and served with your favorite veggies.

Ingredients:
  • Prep Time: 10 min.
  • ¼ cup Hidden Valley® Original Ranch® Light Dressing
  • 1 can (16 ounces) garbanzo beans rinsed, drained
  • 1 clove garlic
  • 1 cup red bell pepper cut into strips
  • 1 Tbsp. lemon juice
  • 1 ½ cups baby carrots
  • 3 Tbsp. warm water
  • 4 (4 inch) pitas cut into wedges
Directions:
  1. Combine garbanzo beans, salad dressing, water, lemon juice and garlic in food processor.
  2. Process until smooth.
  3. Serve as a dip with pepper strips, carrots and pita wedges.

Parmesan-Ranch Baked Zucchini Coins

Sliced and covered in Hidden Valley® The Original Ranch® , sprinkled with parmesan cheese and baked until lightly brown, this zucchini snack is a delicious break from the norm.

  • 2 cups zucchini washed unpeeled

Directions:
  1. Preheat oven to 475°F.
  2. Cut zucchini horizontally into 1-inch slices and spread with Hidden Valley® The Original Ranch® Light Dressing (both sides).
  3. Lay on cookie sheet and sprinkle with Parmesan cheese.
  4. Bake for 10 minutes or until tops are lightly browned.

Carrot Oven Fries

Put a new spin on fries, with these carrot slices, seasoned, coated and baked to perfection.

Ingredients:
  • Serves: 4-6
  • Prep Time: 5 min.
  • Cook Time: 25 min.
  • 1 lb. (about 5 or 6 large) carrots peeled, cut into 4-in. x ¼-in. sticks
  • 1 tsp. corn starch
  • 1 tsp. olive oil
  • cooking spray
  • 1 packet Hidden Valley® The Original Ranch® Salad Dressing & Seasoning Mix
Directions:
  1. Preheat the oven to 400°F. In a large bowl, combine the carrots together with the olive oil, corn starch and Hidden Valley® The Original Ranch® Salad Dressing & Seasoning Mix, and toss until well coated.
  2. Using a sheet tray or quarter sheet pan, spray generously with cooking spray.
  3. Arrange the carrots in a single layer on pan and bake for 25 to 30 minutes or until crispy.
  4. Bake for 35 minutes for extra crispy fries.

Confetti Cauliflower Popcorn

Confetti Cauliflower Popcorn

Make a ranchy, fun and delicious appetizer when you bake up this cauliflower recipe that’ll make you think you’re at the movies.

Ingredients:
  • Serves: 4
  • Prep Time: 10 min.
  • Cook Time: 45 min.
  • 1 head confetti cauliflower (purple, orange, yellow or green)
  • 1 packet Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix
  • Hidden Valley® Original Ranch® Light Dressing (optional for dipping)
  • 1 Tbsp. olive oil
Directions:
  1. Preheat oven to 350° F.
  2. Break cauliflower into bite-size florets about the size of popped corn.
  3. Toss cauliflower florets, olive oil and Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix in a large bowl until well coated.
  4. Spread cauliflower on a baking sheet and bake for 45 minutes, turning 3-4 times while baking, until cauliflower is slightly browned and tender.
  5. Remove from oven and serve immediately.
  6. Note: Double the ranch flavor by drizzling Hidden Valley® Original Ranch® Light Dressing over the popped cauliflower.
