Ingredients:
  • 1/2 cup water
  • 1/4 cup butter or margarine
  • 1/2 cup Gold Medal® all-purpose flour
  • 1 1/2 tsp. chopped fresh or 1/2 tsp. dried thyme leaves
  • 2 eggs
  • 1 1/2 cups deli chicken salad
Directions:
  1. Heat oven to 400°F. In 2-quart saucepan, heat water and butter to rolling boil. Stir in flour and thyme; reduce heat to low. Stir vigorously about 1 minute or until mixture forms a ball; remove from heat. Beat in eggs, one at a time, and beating until smooth after each addition.
  2. On an ungreased cookie sheet, drop dough by rounded Tbsp.ful about 2 inches apart.
  3. Bake 25 to 30 minutes or until puffed and golden brown. Cool on cookie sheet away from draft, about 30 minutes.
  4. Cut off top one-third of each puff and pull out any filaments of soft dough. Fill each puff with 1 rounded Tbsp. chicken salad.

Tea Sandwich Flats

Goat cheese and prepared egg salad make a creamy topping for puffed squares of crescent roll dough, while sliced radish and cucumber add a satisfying crunch.

Ingredients:
  • 1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls or 1 can (8 oz) Pillsbury® Crescent Recipe Creations® refrigerated seamless dough sheet
  • 2 oz cream cheese, softened
  • 2 oz soft goat cheese (chèvre)
  • pinch garlic powder
  • 1 tsp. finely chopped fresh dill, basil or thyme
  • 1/2 cup deli egg salad
  • 6 (1/4-inch) cucumber slices
  • 3 radishes
  • 1/4 yellow bell pepper
  • fresh dill, basil or thyme
Directions:
  1. Heat oven to 375°F. Unroll dough onto ungreased cookie sheet to form 12x8-inch rectangle; if using crescent roll dough, firmly press perforations to seal.
  2. Bake 9 to 11 minutes or until golden brown. Cool completely, about 20 minutes. Cut into 24 (2x2-inch) squares.
  3. For goat cheese topping, in medium bowl, stir together cream cheese, goat cheese, garlic powder and 1 tsp. dill. Spoon about 2 tsp. cheese mixture onto each of 12 crescent squares. Top with veggies and additional fresh herbs.
  4. For egg salad topping, spoon about 2 tsp. egg salad onto each of 12 remaining crescent squares. Top with veggies and additional fresh herbs.

Orange Madeleine’s

Orange Madeleine’s

Special madeleine molds will give you just the right crispness on the edge of these classic pastries, but try using a muffin, mini-muffin, or whoopee pie pan if that’s what you happen to have on hand.

Ingredients:
  • 1 egg, separated
  • 1/2 cup granulated sugar
  • 1 cup Gold Medal® all-purpose flour
  • 1/2 cup milk
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. orange-flavored liqueur or orange juice
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. grated orange peel
  • 1/4 tsp. salt
  • powdered sugar
Directions:
  1. Heat oven to 375ºF. Grease and flour twenty-four 3-inch madeleine molds. Beat egg white in small bowl with electric mixer on high speed until foamy. Beat in 1/4 cup of the granulated sugar, 1 Tbsp. at a time. Continue beating until stiff and glossy; set meringue aside.
  2. Beat egg yolk, remaining 1/4 cup granulated sugar and remaining ingredients except powdered sugar in medium bowl with electric mixer on high speed 2 minutes, scraping bowl occasionally. Fold in meringue.
  3. Fill molds two-thirds full. Tap pan firmly on counter to remove air bubbles. Bake 10 to 12 minutes or until edges are light brown. Cool slightly before removing from pan. Cool on wire rack. Sprinkle with powdered sugar just before serving.

Lemon Tea Cookies

Ingredients:
 
Dough
  • 1 2/3 cups All Purpose or Unbleached Flour
  • 1/3 cup powdered sugar
  • 1 cup margarine or butter, softened
  • 1 tsp. vanilla
Filling
  • 1 egg, beaten
  • 2/3 cup sugar
  • 2 to 3 tsp. grated lemon peel
  • 1 tsp. cornstarch
  • 1/4 tsp. salt
  • 3 Tbsp. lemon juice
  • 1 Tbsp. margarine or butter
  • 1 to 2 Tbsp. powdered sugar or coconut
Directions:
  1. Lightly spoon flour into measuring cup; level off. In medium bowl, combine all dough ingredients; blend well. Cover with plastic wrap; refrigerate 30 minutes for easier handling.
  2. Heat oven to 350°F. Shape dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. With thumb, make imprint in center of each cookie.
  3. Bake at 350°F. for 8 to 10 minutes or until light golden brown. Immediately remove from cookie sheets. Cool completely.
  4. In medium saucepan, combine all filling ingredients except powdered sugar. Cook over low heat until smooth and thickened, stirring constantly. Cool filling slightly. Spoon 1/4 tsp. filling into center of each cooled cookie; decorate as desired.

Ingredients:
  • 1 box Betty Crocker® SuperMoist® white cake mix
  • water, vegetable oil and egg whites called for on cake mix box
  • 1 1/2 containers Betty Crocker® Rich & Creamy white frosting
  • Betty Crocker® blue gel food color
  • decorating bag with tips
  • 1 plastic plate
  • 1 or 2 large marshmallows
  • Betty Crocker® colored sugar
  • candy-coated chocolate candies
Directions:
  1. Heat oven to 350°F (325°F for dark or nonstick pan). Make, bake and cool cake as directed on box for 13x9-inch pan.
  2. Cut cake crosswise in half. On serving plate, place 1 cake piece; spread top with 2 Tbsp. white frosting from 1/2 container. Top with second cake piece. Stand cake pieces on end with cut sides down. Freeze 1 hour.
  3. Stir food color into 1 container of frosting to tint light blue. Spread entire cake with light blue frosting.
  4. Along front and top of cake, mark outline of an elongated V-shape with toothpick for purse flap. Stir food color into remaining 1/2 container of frosting to tint dark blue; frost purse flap with dark blue frosting. Place remaining dark blue frosting in decorating bag fitted with writing tip #7 or #8; pipe shell border along purse flap and edges of purse.
  5. Cut rim from plastic plate; cut rim in half. Insert into top of cake for handle. Decorate purse with candies. Cut marshmallow with dampened kitchen scissors into slices; sprinkle with colored sugar. Arrange marshmallow slices on purse for clasp. Press candy onto center of clasp. Store loosely covered.

  1. In large pitcher, mix tea, juice and sparking water.

Chai Iced Tea

Chai Iced Tea

Treat the adults at your tea party to a refreshing drink with hints of cardamom and clove.

Ingredients:
  • 8 chai tea bags
  • 4 cups hot water
  • 1 Tbsp. vanilla
  • 1/4 to 1/2 cup packed brown sugar
  • 1/2 cup orange-flavored cream soda
  • 1/2 cup vanilla-flavored cream soda
  • 1/2 cup milk
  • cinnamon sticks, if desired
Directions:
  1. Chill glasses in freezer several hours before serving.
  2. Steep tea bags in hot water 3 to 5 minutes. Remove bags. Stir vanilla and brown sugar into tea until sugar is dissolved. Stir in all remaining ingredients except cinnamon sticks. Refrigerate at least 1 to 2 hours to blend flavors.
  3. Serve over ice. Garnish with cinnamon stick.
