Sun-Dried Tomato and Goat Cheese Tartlets

Start your evening with this tasty treat. Fill wonton tartlets with a combination of Egg Beaters®, goat cheese and sun-dried tomatoes. Bake and serve warm.

Hands On:20 | Total: 30 | Makes: 12 servings (2 tarts each)
 
Ingredients:
  • PAM® Original No-Stick Cooking Spray
  • 24 wonton wrappers
  • 3/4 cup Egg Beaters Original
  • 1/3 cup crumbled goat cheese
  • 2 Tbsp. oil-packed dried tomatoes, drained, finely chopped
Directions:
  1. Preheat oven to 375°F. Spray miniature muffin cups with cooking spray. Gently press 1 wonton wrapper into each muffin cup allowing edges to extend above edges of cups.
  2. Combine Egg Beaters, goat cheese and tomatoes in small bowl. Spoon mixture evenly into wonton wrapper cups. Spray edges of wrappers lightly with cooking spray.
  3. Bake 10 minutes, or until set. Serve warm or at room temperature.

Roasted Beet and Orange Salad with Chocolate Hazelnut Vinaigrette

Roasted Beet and Orange Salad with Chocolate Hazelnut Vinaigrette

Combine roasted beets, arugula, radicchio mixture, oranges and hazelnuts and dress with a vinaigrette to make a salad you’re sure to fall in love with.

Ingredients: (For the salad)
  • 2 red beets, medium
  • 2 navel oranges
  • 6 ounces of arugula
  • 1 head of radicchio, roughly chopped
  • ¼ cup of hazelnuts, toasted and chopped
Ingredients: (For the dressings)
  • 1 shallot, minced
  • 1 tsp. of brown sugar
  • 1 ounce of orange juice, from the fresh orange
  • ½ ounce of champagne vinegar
  • 1 Tbsp. of HERSHEY’S® Syrup
  • 3 ounces of blended oil
  • 1 ½ ounces of hazelnut oil
  • 1 Tbsp. of basil
  • Salt and pepper to taste
Directions: (for the salad)
  1. Wash the beets, cut off both ends and place in bowl. Add oil, salt and pepper.
  2. Lay beets on a baking sheet and roast at 400 degrees for 35-40 minutes.
  3. Segment the orange and reserve juice for the vinaigrette.
  4. Rough chop the radicchio and mix with arugula
Directions: (for the dressing)
  1. Combine blended oil and hazelnut oil in a small container. Set aside.
  2. Combine shallots, brown sugar, orange juice, vinegar and HERSHEY’S Syrup in a bowl. Mix well
  3. Slowly add oils to above mixture while whisking. Continue to whisk until fully incorporated.
  4. Add basil, salt and pepper, and mix well.
  5. Taste and adjust seasoning, if necessary.

Combine the arugula and radicchio mixture, oranges, hazelnuts and beets together in a bowl. Dress with the vinaigrette and serve.

Rib Eye Steak Italiano for Two

This rib eye steak bursts with flavor when topped with fire roasted tomatoes in basil pesto.

Hands On:10 | Total: 25 | Makes: 2 servings (1 steak each)
 
Ingredients:
  • 1/2 cup (1/2 of 14.5-oz can) drained Hunt's® Fire Roasted Diced Tomatoes
  • 1/4 cup refrigerated basil pesto
  • PAM® Original No-Stick Cooking Spray
  • 2 boneless beef rib eye steaks (2 steaks = 3/4 lb)
Directions:
  1. Preheat broiler. Mix drained tomatoes and pesto in small bowl until blended; set aside. Spray rack of broiler pan with cooking spray. Place steaks on rack; broil 4 to 6 inches from heat for 5 minutes.
  2. Remove from broiler. Turn steaks over; spread tomato mixture over steaks. Broil 5 to 6 minutes more or until medium done (160°F).
Cook's Tips
  1. An outdoor grill or stove-top grill pan may be used to cook steaks in place of the broiler, if desired.

Valentine's Day Chocolate Mousse Recipe

Valentine's Day Chocolate Mousse Recipe

It wouldn’t be Valentine’s day without this deliciously, chocolatey, mousse topped with a chocolate heart to make it extra sweet.

Ingredients:
  • 1/2 cup whipping cream, whipped, plus 3/4 cup whipping cream, whipped
  • 8 strawberries (optional)
  • 4 egg yolks, beaten
  • 1-3/4 cups HERSHEY'S® SPECIAL DARK Chocolate Chips or HERSHEY'S® Semi-Sweet Chocolate Chips or HERSHEY'S® Milk Chocolate Chips
  • 1 tsp. vanilla extract
  • 1 cup milk
  • 1/2 cup water
  • 1/3 cup sugar
  • 3 Tbsp. cornstarch
  • CHOCOLATE HEARTS(recipe follows, optional)
Directions:
  1. Prepare CHOCOLATE HEARTS.
  2. Stir together sugar and cornstarch in medium heavy saucepan. Stir in milk and water. Cook and stir over medium-high heat until boiling. Stir about half of hot mixture into beaten egg yolks. Return all to saucepan. Boil gently 1 minute, stirring constantly. Remove from heat.
  3. Add chocolate chips and vanilla to hot mixture; stir until chocolate is melted. Pour into small metal bowl. Set bowl inside a larger bowl filled with ice water. Beat on high speed of mixer about 5 minutes or until chocolate mixture is completely cooled. Fold in the whipped 3/4 cup cream. Spoon into martini glasses or dessert dishes.
  4. Cover lightly with plastic wrap. Refrigerate 30 minutes or up to 2 days. Just before serving, top each with a dollop of the whipped 1/2 cup cream and a strawberry, if desired. Peel chocolate hearts from wax paper; place one on each dessert.

CHOCOLATE HEARTS: Place 1/4 cup HERSHEY'S SPECIAL DARK Chocolate Chips, HERSHEY'S Semi-Sweet Chocolate Chips or HERSHEY'S Milk Chocolate Chips and 1/2 tsp. shortening (do not use butter, margarine, spread or oil) in small microwave-safe bowl. Microwave at MEDIUM (50%) 30 seconds; stir until melted. Let stand 2 minutes. Pour into heavy duty small plastic bag, Cut off a tiny corner of the bag. Squeeze bag to pipe mixture into heart shapes on wax paper. Refrigerate until firm.

Tip: To form perfectly shaped chocolate hearts, trace around a small heart-shaped cookie cutter on a piece of white paper. Tape wax paper over the white paper; pipe chocolate on wax paper following the outline.

Directions:
  1. Brew Seattle’s Best Coffee® Hazelnut flavored coffee per package directions
  2. Coat mug with 2 Tbsp HERSHEY’S chocolate syrup
  3. Pour in 6 fl. oz. of coffee
  4. Stir in 3 Tbsp half & half
  5. Top with Reddi Wip & chocolate powder

HERSHEY'S® HUGS & KISSES Sweetheart Roses

HERSHEY'S® HUGS & KISSES Sweetheart Roses

The only thing sweeter than bringing roses to your sweetheart is bringing this hand made chocolate rose bouquet to your Valentine.

Supplies:
  1. HERSHEY'S KISSES Brand Chocolates or HERSHEY'S HUGS Chocolates, in pink and red foils
  2. Florist tape
  3. Safe confectioners' glue
  4. Artificial leaves (optional)
  5. Florist wire
  6. Ribbon
  7. Clear cellophane or plastic wrap
Directions:
  1. For each candy rose, spread confectioners' glue on bottom of one foil-wrapped chocolate. Firmly press the bottom of another chocolate to it. Insert florist wire into one pointed end of double chocolate. Wrap 4-inch square of clear cellophane around double chocolate, twisting cellophane tightly around chocolate.
  2. Starting at bottom of rose, wrap florist tape around edges of cellophane, continuing down the full length of wire with tape. Add 1 or 2 artificial leaves, if desired, securing leaves in place with florist tape.
  3. Tie two or more candy roses together with a bow.
  4. Completed craft is for decorative purpose only and candy should not be eaten.
